Apple FlapJacks
This months Apple Flapjack recipe has been kindly provided by Jill Coombe from the local Pudding Club in Chipping Camden.
The Pudding Club was founded at the Three Ways House Hotel in 1985 to prevent the demise of the great British Pudding, at a time when restaurants seemed to offer only tiny portions of Frozen Cheesecake and tasteless Gateaux. Today the Pudding Club and its supporters can claim that their efforts have re-established such delights as Jam Roly Poly, Syrup Sponge, Spotted Dick and Bread and Butter pudding! Ingredients
1 kg seasonal cooking apples
75 g caster sugar
150 g unsalted butter
4 tablespoons of golden syrup
240 g rolled oats
pinch of salt
1 teaspoon of ground ginger
Method
Preheat oven to 190 C
Simmer most of the apple with 50g sugar until soft. Grease a shallow 20 cms pie dish.
Heat the butter, sugar & syrup together until dissolved, stir in the oats, salt & Ginger.
Line the base & sides of the dish within 2.5 cms of the top using the oat mixture. Pour the apples into the centre.
Cover with the remaining oat mixture & tap down lightly.
Bake for 35 minutes.
Sprinkle with icing sugar.
Serve with custard or cream or even ice cream!
